

From September through January, you may purchase a whole or half animal directly from the Ranch. Less that one year in age, our beef is full of flavor yet very lean and tender.
Cuts from a half animal require about 3.5 cubic feet of freezer space. A half animal will yield approximately 100-110 lbs of packaged beef.
We recommend Fort Sumner Processing, a U.S.D.A. Certified Processor, and will deliver your animal to them at no charge. After two weeks dry-ageing, Fort Sumner will cut and package the beef to your specifications (see “Rancher’s Pack” and Custom Cuts), and ship to you via FedEx frozen on dry-ice.
